Method

Prep

  1. 1

    Chill glass

Place a rocks glass or coupe in the freezer for 5–10 minutes or fill with ice and cold water while you prepare the cocktail to chill the glass.

  2. 2

    Make Demerara syrup (if needed)

Combine 2 parts Demerara sugar with 1 part hot water, stir until dissolved, cool. Store refrigerated. Use 2:1 syrup at room temperature.

  3. 3

    Make balsamic shrub/syrup (if needed)

If you don't have balsamic shrub, make a quick balsamic syrup by reducing 1 part balsamic vinegar with 1 part sugar over low heat until slightly thickened, then cool. Alternatively use a prepared balsamic shrub 1:1 diluted with water to syrup consistency.

Build & stir

  1. 4

Discard the chilling ice or remove the glass from the freezer and set aside.

  2. 5

Fill a mixing glass or large stirring glass with plenty of fresh ice to the top.

  3. 6

Add 2 oz aged rum to the mixing glass.

  4. 7

Add 0.5 oz dry curaçao to provide a bright orange note.

  5. 8

Add 0.25 oz balsamic shrub or balsamic vinegar syrup to introduce tangy, savory depth. Use the shrub version if you want more acidity; syrup will be sweeter and silkier.

  6. 9

Add 0.25 oz Demerara syrup (2:1) to round and balance the acidity and boozy edge.

  7. 10

Add 2 dashes aromatic bitters to deepen spice and complexity.

  8. 11

Stir the mixture briskly for 20–30 seconds (about 25–30 turns) until well chilled and slightly diluted — the mixing glass should feel quite cold and slightly frosted.

  9. 12

Strain the cocktail through a fine hawthorne or julep strainer (and a fine mesh if using shrub with solids) into the chilled rocks glass over a large ice sphere or block, or neat into a chilled coupe if preferred.

Garnish & finish

  1. 13

Express an orange peel over the drink by holding the peel with the colored side down about 3–4 inches above the cocktail and giving it a firm squeeze to spray the essential oils across the surface.

  2. 14

Run the expressed peel around the rim of the glass then drop it into the drink as garnish.

  3. 15

Optional: very lightly grate a dusting (about 1/4 tsp) of dark chocolate or nutmeg over the surface for an aromatic finishing note — do not overwhelm the drink.

  4. 16

    Serve immediately.
