Method

Arak Cocktail

  1. 1

    Prepare glass and mint

Place 4–6 fresh mint leaves in the bottom of a sturdy cocktail shaker or mixing glass. Add the simple syrup and gently muddle the mint just until fragrant — do not pulverize; you want to release the oils without turning the leaves to mush.

  2. 2

    Add citrus and spirits

Pour in the fresh lemon juice and the arrack (or anise liqueur). Add the cold water and a handful of ice cubes. Stir vigorously for about 15–20 seconds to chill and dilute slightly. If you prefer a sweeter/less-bright drink, add remaining simple syrup to taste (the recipe quantity assumes a moderately tart profile).

  3. 3

    Strain and assemble

Fill the serving glass with crushed ice. Double-strain the shaken mixture over the crushed ice using a fine mesh strainer to catch mint bits and any pulp. If you like a longer, fizzier drink, top with up to 1/2 cup club soda or sparkling water and gently stir once to combine.

  4. 4

    Garnish and serve

Garnish with 2 fresh mint leaves gently slapped between your palms to release aroma and a lemon wheel or twist on the rim. Serve immediately with a straw or short spoon. Encourage guests to stir occasionally to keep flavors integrated as the ice melts.

  5. 5

    Optional variations

For a creamier, shaken froth, substitute 1 tablespoon of aquafaba (chickpea liquid) for part of the water and dry-shake (no ice) with the lemon, syrup, arrack, and mint first, then add ice and shake again. For a herb-forward version, include a small sprig of thyme when muddling.
