Decadent Cloud 9 Dessert (assembly & components)
Method
Decadent Cloud 9 Dessert (assembly & components)
- 1
Prepare gelatin bloom
Sprinkle the gelatin powder over 2 tablespoons cold water in a small bowl. Let sit for 5 minutes to bloom while you prepare other components.
- 2
Melt white chocolate
Place chopped white chocolate and 3 tablespoons milk in a heatproof bowl. Microwave in 20-second bursts, stirring between each, until smooth (about 40–60 seconds total). Alternatively, melt over a double boiler. Set aside to cool slightly but remain pourable.
- 3
Make ricotta-honey base
In a medium bowl, combine well-drained ricotta, honey, and lemon zest. Use a whisk or spatula to smooth. Fold in the slightly cooled melted white chocolate until fully incorporated and smooth. If mixture becomes stiff, warm gently for a few seconds and stir.
- 4
Dissolve gelatin
Microwave the bloomed gelatin for 8–10 seconds or warm it over very low heat until liquid (do not boil). Stir the dissolved gelatin into the ricotta-white chocolate mixture quickly and evenly to ensure it disperses.
- 5
Whip cream
In a chilled mixing bowl, combine heavy cream, granulated sugar, and vanilla extract. Whip with a hand mixer or stand mixer fitted with the whisk attachment until soft-medium peaks form (the cream should hold shape but still be soft).
- 6
Combine cream with ricotta base
Fold one-third of the whipped cream into the ricotta-white chocolate mixture to lighten it. Then gently fold in the remaining whipped cream until just combined and airy. Taste and adjust sweetness with up to 1 tablespoon additional powdered sugar if desired.
- 7
Prepare cream cheese swirl (optional accent)
In a small bowl, beat softened cream cheese with 2 tablespoons powdered sugar until smooth and slightly soft. If too thick, loosen with 1 teaspoon milk. This will be used as a tangy swirl to contrast the cloud mixture.
- 8
Layer dessert
In 6 serving glasses or bowls, divide half of the cubed angel food cake evenly among them as the first layer. Spoon or pipe a generous layer (about 1/3 of mixture) of the cloud (ricotta-white chocolate whipped cream) over the cake. Add a few fresh raspberries on top of that layer and a light spoonful of the cream cheese swirl in small dollops (reserve any leftover for garnish). Repeat with a second smaller layer of cake cubes and another 1/3 of the cloud mixture, finishing with remaining cloud on top.
- 9
Chill to set
Cover the assembled desserts and refrigerate for at least 1 hour to let the gelatin set the cloud mousse and the flavors meld. Up to 4 hours is fine; avoid freezing.
- 10
Garnish and serve
Just before serving, top each portion with remaining raspberries, a sprinkle of toasted almond slices, a few mint leaves and edible flowers if using. If you reserved extra cream cheese swirl, pipe or dot a small rosette on top for contrast. Serve chilled.
- 11
Storage
Store leftovers covered in the refrigerator for up to 48 hours. The angel food cake will soften over time but the dessert will remain pleasant for two days.
