Prepare seasoned rice

If rice is freshly cooked, spread 3 cups cooked short-grain rice on a tray to cool slightly. Gently fold in 2 tablespoons rice vinegar, 1 teaspoon sugar and 1 teaspoon kosher salt until evenly distributed. Let cool to room temperature (30–45 minutes).

Form rice cakes

Divide the seasoned rice into 12 equal portions (about 2 tablespoons each). Wet your hands to prevent sticking and press each portion into compact rectangles or rounds roughly 2.5–3 inches wide and 1/2 inch thick. Press firmly so they hold together when fried.

Fry until crispy

Heat 1/2 cup neutral oil in a heavy skillet over medium-high heat until shimmering. Add rice cakes (work in batches if needed) and fry 3–4 minutes per side until a deep golden-brown crust forms. Reduce heat if browning too quickly. Finish with a light brush of 1 teaspoon toasted sesame oil on each side after removing from pan. Transfer to paper towel-lined tray and keep warm in a low oven (200°F/95°C) while you prepare toppings.

Season salmon

Cut the 10 oz salmon fillet into 12 small pieces that will sit atop each rice cake (approximately 3/4–1 oz per piece). Pat dry, then lightly season with 1/4 tsp salt and 1/8 tsp black pepper. Marinate briefly by brushing each piece with 1 tablespoon soy sauce mixed with 1 teaspoon mirin; let sit 5–10 minutes.

Sear the salmon

Heat 1 teaspoon neutral oil in a nonstick or stainless steel skillet over medium-high heat. Sear salmon pieces 20–30 seconds per side for rare to medium-rare (depending on thickness)—you want a lightly caramelized exterior while keeping the interior tender. Remove from heat and let rest briefly. If you prefer fully cooked salmon, cook an extra 30–60 seconds per side.

Slice or flake

If you seared a whole fillet, slice thinly against the grain after resting. For small seared pieces, flake or leave whole to top rice. Reserve any juices to drizzle sparingly over the rice if desired.

Marinated Ikura & Garnishes

Marinate ikura

In a small bowl gently stir 4 oz ikura with 1 tablespoon light soy sauce, 1 teaspoon sake (optional) and 1/4 teaspoon sugar. Mix gently to avoid breaking the eggs. Let marinate in the refrigerator 10–15 minutes while you finish other components.

Prepare serrano and garnishes

Thinly slice 1 serrano pepper very thin (remove seeds if you want less heat). Thinly slice scallions and have 1 teaspoon katsuo furikake ready. If using shiso or microgreens, rinse and pat dry.

Sauce & Assembly

Prepare sauces

If using store-bought spicy mayo, stir to recombine. For a quick spicy mayo, mix 3 tablespoons mayonnaise with sriracha to taste. Warm 1 tablespoon unagi-style glaze or reduced soy-sweet glaze slightly so it’s fluid for drizzling. Cut half a lime for a light squeeze.

Assemble crispy rice bites

Place warm crispy rice cakes on a serving platter. Top each cake with a piece or slice of seared salmon. Spoon about 1/2 teaspoon marinated ikura onto the salmon (reserve any extra ikura for another use).

Finish garnishes

Dot or lightly drizzle 1/4 teaspoon spicy mayo over each bite (use less if desired). Sprinkle a pinch of katsuo furikake over the salmon and ikura. Place one thin serrano slice on each bite (or alternate for heat). Garnish with a few slivers of scallion and a small microgreen or shiso leaf. If desired, lightly brush or drizzle a few drops of the reserved salmon juices or the warm glaze around the bites and finish with a small squeeze of lime over the platter.

Serve

Serve immediately while rice is still crisp. Provide extra spicy mayo, soy, or lime on the side.
