Method
Prepare Fresh Juices & Almond Tonic
Make cucumber juice
Peel (optional) and roughly chop enough cucumber to yield 1/2 cup juice. Place chopped cucumber in a blender and blitz until smooth. Strain through a fine-mesh sieve or cheesecloth into a bowl, pressing to extract as much liquid as possible. Chill briefly if not already cold.
Combine base ingredients
In a pitcher, combine 1 cup unsweetened almond milk, 3/4 cup fresh lime juice, 1/2 cup cold cucumber juice, 2 tablespoons simple syrup, 1 teaspoon grated fresh ginger, and 1/4 teaspoon fine sea salt. Whisk vigorously until the mixture is homogenous and frothy at the top. Taste and adjust sweetness or acidity: add up to 1 tablespoon simple syrup more or additional lime juice by 1 teaspoon increments to balance.
Build the Cocktail (Zero-Proof)
Assemble and add effervescence
Strain the chilled mixture into two chilled highball glasses filled halfway with ice (divide evenly). Top each glass with the chilled sparkling water — about 1 cup per glass (total 2 cups used). Pour gently over the back of a spoon or down the side of the glass to preserve effervescence and avoid breaking the almond froth too much. Stir once gently with a bar spoon to combine.
Finish & Garnish
If using non-alcoholic bitters or gentian tincture, add 2 teaspoons to each glass and give one gentle stir to incorporate. This adds depth and a subtle tonic bitterness that complements the lime and almond.
Serve immediately while effervescent. Sip slowly — the interplay of crisp cucumber, bright lime, and creamy almond is the restorative point of this mocktail.
