Molten Chocolate Cakes
Prep
Preheat oven to 450°F (230°C). Generously butter four 6-ounce ramekins (or six 4-ounce ramekins). Dust the inside of each ramekin with cocoa powder, tapping out excess. Place ramekins on a baking sheet.
Melt chocolate and butter
In a heatproof bowl set over a saucepan of gently simmering water (double boiler), combine chopped bittersweet chocolate and 8 tablespoons butter. Stir occasionally until fully melted and smooth. Remove from heat and let cool for 3 minutes.
Whisk sugars and eggs
In a medium bowl, whisk together 2 tbs granulated sugar, 2 tbs light brown sugar, 4 whole eggs, and 2 egg yolks until mixture is smooth and slightly thickened, about 1 minute. Stir in 1 tsp vanilla extract.
Combine
Slowly pour about one-third of the melted chocolate mixture into the egg mixture, whisking constantly to temper the eggs. Then pour the egg-chocolate mixture back into the remaining melted chocolate and stir to combine until glossy and uniform. Add a pinch of salt.
Add flour
Sift 1.25 oz (about 3.5 tbsp or ~35 g) all-purpose flour over the chocolate mixture and gently fold with a rubber spatula until just incorporated and smooth. Do not overmix.
Bake
Bake on the middle rack at 450°F (230°C) for 10–12 minutes for 6-ounce ramekins (9–11 minutes for 4-ounce). The edges should be set and the centers still slightly jiggly when gently shaken. Avoid overbaking — you want a molten core.
Release and rest
Remove from oven and let cakes rest 1 minute. Run a small knife around the inside edge of each ramekin to loosen. Invert each ramekin onto a dessert plate and let sit for 5–10 seconds, then lift ramekin off so the cake releases. If it sticks, run the knife again and invert carefully.
Miso Ice Cream (no-churn)
Whip cream: In a chilled bowl, whip 1.5 cups cold heavy cream to soft peaks using a whisk or electric mixer. Avoid whipping to stiff peaks; soft peaks will fold more easily.
Mix base: In a separate bowl, whisk together 3 tbs sweetened condensed milk, 1.5 tsp white miso paste, 0.5 tsp vanilla extract, and 1/8 tsp fine sea salt until smooth and miso is fully dissolved.
Fold together: Gently fold one-third of the whipped cream into the miso-condensed milk mixture to lighten it, then fold in the remaining whipped cream until homogeneous. Taste and adjust salt or miso if you prefer a more pronounced savory note (add up to 1/4 tsp miso total).
Chill: Transfer mixture to a loaf pan or airtight container and freeze for at least 2–3 hours until firm. For a slightly softer, scoopable texture, freeze 2 hours; for firmer scoops, freeze 4 hours or overnight.
Finishing & Serving
Plate: Place an inverted warm chocolate lava cake on each dessert plate. Spoon or place one scoop of miso ice cream alongside or on top of the cake.
Garnish: Dust lightly with powdered sugar if desired and add fresh berries or a small mint sprig. Serve immediately so the cake's molten center contrasts with the cold ice cream.
Timing tip: Bake the cakes just before serving so they come out warm. If serving multiple orders, bake in two batches or keep finished baked cakes briefly in a 200°F (95°C) oven for up to 10 minutes (this will firm them; avoid long holds as they will continue to cook).
