Aburi Oshi and Roll Ingredients

Method

Prepare Sushi Rice

Cook the Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions.

Season the Rice

Once cooked, transfer the rice to a large bowl. Mix rice vinegar, sugar, and salt in a small bowl until dissolved, then gently fold this mixture into the warm rice. Allow to cool.

Prepare Aburi Sushi

Assemble the Roll

Place a nori sheet on a sushi mat. Wet your hands and spread a thin layer of sushi rice over the nori, leaving a small border at the top. Arrange slices of avocado and cucumber in the center, then add a layer of the fresh fish. Roll tightly using the mat.

Cut the Roll

Using a sharp knife, cut the roll into 6-8 pieces. Repeat with remaining ingredients.

Aburi (Torching)

Using a blow torch, briefly sear the top of the assembled sushi rolls and nigiri pieces for a few seconds until they show a slight char.

Serve

Plating

Arrange the Aburi Oshi, rolls, and nigiri on a serving plate. Serve with soy sauce, wasabi, and pickled ginger on the side.
