Sushi Rice

Aburi Toppings

Garnishes

Method

Prepare Sushi Rice

  1. 1

    Rinse and Cook the Rice

Rinse sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions.

  2. 2

    Season the Rice

In a small saucepan, combine rice vinegar, sugar, and salt. Heat over low heat until sugar dissolves. Once the rice is cooked, transfer to a large bowl and gently fold in the vinegar mixture. Allow to cool.

Prepare Aburi Toppings

  1. 3

    Slice the Fish

Thinly slice the fresh salmon, tuna, and scallops into bite-sized pieces.

  2. 4

    Sear the Fish

Heat a grill or a blowtorch. Lightly sear the top of each fish slice until slightly charred, being careful not to cook through.

  3. 5

Drizzle with Sesame Oil and Soy Sauce

Drizzle toasted sesame oil and soy sauce over the seared fish slices. Garnish with chopped chives.

Assemble the Sushi

  1. 6

    Form Sushi

Take a small amount of sushi rice (about 2 tablespoons) and form it into a small oval shape. Place a slice of the seared fish on top of the rice.

  2. 7

    Add Garnishes

Serve the sushi with wasabi, pickled ginger, and nori sheets on the side.
