Prepare peppers

Wear gloves or wash hands thoroughly. Trim stem ends from the jalapeños and slice into 1/8–1/4 inch rounds. If you prefer milder heat, remove seeds and membranes; otherwise leave them in.

Make brine

In a small saucepan combine water, white vinegar, granulated sugar, and kosher salt. Add smashed garlic cloves, black peppercorns, and dried oregano if using. Bring the mixture to a simmer over medium heat, stirring until sugar and salt dissolve (about 3–4 minutes). Do not boil vigorously—just a gentle simmer.

Pack and pour

Place the sliced jalapeños into a clean heatproof jar (a 16-ounce / 500 ml jar works well). Pour the hot brine over the peppers, making sure slices are fully submerged. Use a spoon to push them down and release trapped air pockets.

Cool and chill

Let the jar cool to room temperature (about 30–45 minutes). Seal with a lid and refrigerate. The jalapeños will have mild pickled flavor after 1 hour, good flavor after 24 hours, and best texture/flavor after 48 hours. Keep refrigerated up to 4–6 weeks.

Combine crema ingredients

In a small bowl combine sour cream, mayonnaise, and lime juice. Stir until smooth.

Add pickled jalapeños

Finely mince 2 tablespoons of the pickled jalapeño slices you prepared. Fold them into the crema along with chopped cilantro. Taste and adjust salt or lime juice as needed.

Chill and serve

Cover and refrigerate the crema for at least 15 minutes to let flavors meld. Serve alongside tacos, grilled meats, sandwiches, or as a dipping sauce.
