Prepare pineapple

If using a whole pineapple, trim top and bottom, stand upright and slice off the skin, then remove any remaining eyes with a small knife. Cut the fruit away from the core and dice into small 1/2-inch (1–1.5 cm) chunks until you have about 2 cups.

Combine and macerate

Place the pineapple chunks in a medium mixing bowl. Add 2 tablespoons pineapple juice, 1 tablespoon granulated sugar, 1 teaspoon lime juice and a pinch of fine sea salt. Stir gently to combine so the sugar begins to dissolve and the juices coat the fruit.

Rest to develop flavor

Let the mixture sit at room temperature for 10–15 minutes, stirring once or twice to help the sugar dissolve and the juices develop. If you need the topping cold sooner, refrigerate for 10–15 minutes instead.

Adjust sweetness and consistency

Taste the pineapple after macerating. If it needs more sweetness, add up to 1 teaspoon additional sugar. If it seems dry, add another teaspoon of pineapple juice. Stir and taste again.

Right before serving, sprinkle the torn mint leaves and toasted shredded coconut over the pineapple topping for a bright, aromatic finish. Toss gently if using on a dish so garnish is evenly distributed.

Use immediately as an extra pineapple topping for desserts, tacos, grilled meats, yogurt, oatmeal, or burgers. Store any leftover pineapple topping in an airtight container in the refrigerator for up to 3 days.
