Temper the cheeses
Remove all cheeses from the refrigerator 30–60 minutes before serving. Letting cheese come to room temperature (about 30–60 minutes depending on size) allows aromas and flavors to open up.
If any cheese has a rind that is inedible or undesired, trim minimally with a sharp knife, keeping the shape intact. For wheel cheeses (brie/goat), leave whole and score the top in a shallow crosshatch if desired.
Slice or break hard cheeses into bite-sized shards. Cut semi-soft cheeses into wedges. Place spreadable cheeses in a small dish for easy serving.
Accompaniments
Slice baguette or arrange crackers on the board in small stacks or fanned rows so guests can easily take pieces without touching the cheeses directly.
Wash and dry fruit. Halve grapes if large. Core and thinly slice apples or pears just before serving to prevent browning; optionally toss slices in a teaspoon of lemon juice if you need to prepare them earlier.
Arrange dried fruits and mixed nuts in small piles around the cheeses to create visual balance and textural contrast.
Spoon honey or jam into small bowls and place them on the board near a soft cheese or aged cheese for pairing. Drizzle 1 tsp olive oil over the spreadable cheese, if using, and top with a small sprig of herb.
Assembly & presentation
Label cheeses with small cards or place a cheese knife by each variety to avoid mixing flavors. Garnish the board with fresh herb sprigs and a few whole grapes or fig halves for color.
Serve with a variety of knives/spreaders. Encourage guests to taste from mildest to strongest cheeses. Replenish crackers and fruit as needed.
Storage & leftovers
Wrap leftover cheeses in wax or parchment paper (not plastic directly) and then loosely in foil or in a partially sealed container. Store in the refrigerator. Separate strong-smelling cheeses to avoid flavor transfer.
Leftover sliced fruit and crackers should be stored separately: fruit in an airtight container, crackers in a sealed bag to retain crunch.
