Clean and Brighten
Rinse the basil leaves gently under cool running water to remove dirt and grit. Shake off excess water and pat leaves dry with a clean kitchen towel or spin in a salad spinner until mostly dry. Removing excess moisture prevents dilution of flavor and prevents the oil from sputtering when warm ingredients are added.
Remove Stems
Strip the basil leaves from their thicker stems by pinching or running a knife along the stem. Keep only the tender stems if desired; discard the tougher stems. Measure out 2 packed cups of leaves after stemming.
Brighten Flavor
Place the cleaned basil leaves in a small bowl. Add 1 tablespoon fresh lemon juice and 1 teaspoon kosher salt. Gently toss with your hands to lightly bruise the leaves and coax out aroma—this helps retain a fresh green flavor in the final oil.
Quick Basil Oil
Warm the Oil and Infuse
Pour 120 ml (about 1/2 cup) extra-virgin olive oil into a small saucepan. Add the peeled garlic clove and 1 teaspoon crushed red pepper flakes. Warm the oil over low heat until it is fragrant and reaches about 60–70°C (140–160°F), watching carefully so it does not smoke or fry the garlic. This should take 3–4 minutes. Remove from heat.
Combine with Basil
Remove and discard the garlic clove (or finely mince it and return if you prefer a stronger garlic presence). Transfer the warm oil to a heatproof container. Add the prepared basil leaves (with lemon and salt) to the warm oil and let them sit for 2–3 minutes to wilt slightly and release aromatics into the oil.
Blend Smooth
Working in a blender or using an immersion blender in a tall jar, blend the basil and oil until smooth and bright green, about 20–30 seconds. If a looser texture is desired, add up to 1–2 tablespoons additional olive oil. Taste and adjust seasoning with a pinch more salt or a few drops more lemon juice as needed.
Optional Serving Additions
Finish and Serve
If using, stir in 2 tablespoons toasted pine nuts or walnuts and 2 tablespoons grated Parmesan for a pesto-like finish. Season with freshly ground black pepper to taste. Use the basil oil immediately drizzled over grilled vegetables, fresh tomatoes, fish, chicken, or crostini. Alternatively, store the oil in a sealed jar in the refrigerator for up to 5 days—bring to room temperature before using; the oil may solidify slightly in cold conditions.
Notes: This recipe produces a bright basil-infused oil that highlights the herb's flavor without full olive-and-nut pesto richness. To convert to a classic basil pesto, increase the nuts to 1/3 cup, add 1/3 cup cheese, and blend until a thicker paste forms.
