Cooking Instructions
Prepare the Noodles
Cook the wide rice noodles according to package instructions. Drain and set aside.
Chop the Vegetables
Thinly slice the red bell pepper, serrano chili, and carrot. Set aside.
Make the Sauce
In a small bowl, combine sweet and spicy Thai sauce with a little water to thin it out if necessary. Adjust to taste.
Stir-Fry the Vegetables
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the sliced vegetables and stir-fry for 2-3 minutes until they are tender-crisp.
Combine Noodles and Sauce
Add the cooked noodles to the skillet with the vegetables. Pour the sauce over the top and toss everything together until well coated and heated through.
Add Thai Basil
Remove from heat and stir in the Thai basil leaves until just wilted.
Serve
Serve the Thai drunken noodles hot, garnished with additional Thai basil if desired.
