Prepare the Wings
In a large bowl, season the chicken wings with salt and black pepper. Toss to coat evenly.
Fry the Wings
In a deep skillet or fryer, heat the vegetable oil over medium-high heat. Once hot, add the wings in batches and fry until golden brown and cooked through, about 8-10 minutes. Remove and drain on paper towels.
Make the Sauce
In a small saucepan, combine the sweet chili sauce, tamarind paste, soy sauce, minced garlic, and lime juice. Bring to a simmer over medium heat, stirring frequently for about 5 minutes until slightly thickened.
Toss the Wings
In a large bowl, combine the fried wings with the sweet chili-tamarind sauce. Toss until the wings are well coated.
Serve
Plate the wings and garnish with toasted peanuts, chopped cilantro, and lime wedges on the side.
