Cook grits
Slowly whisk in 1 cup stone-ground grits. Reduce heat to low and simmer, stirring frequently, until grits are thick and tender: about 20–25 minutes for stone-ground or 5–7 minutes for quick grits. If they become too thick, stir in up to 1/2 cup additional water or milk to reach desired creaminess.
Finish grits
Stir in 3 tbs unsalted butter, 1 cup shredded sharp cheddar, 1/2 tsp freshly ground black pepper and 1 tsp hot sauce (optional). Taste and adjust salt as needed. Keep warm on lowest heat, stirring occasionally while preparing shrimp.

Prepare shrimp
Pat 1 lb peeled and deveined shrimp dry with paper towels. Season with 1 tsp kosher salt, 1/2 tsp black pepper, 1/2 tsp smoked paprika and 1/4 tsp cayenne (optional).
Cook bacon
In a large skillet over medium heat cook 3 slices diced bacon until crisp, about 6–8 minutes. Use a slotted spoon to transfer bacon to a paper towel-lined plate, leaving rendered fat in the pan (about 1–2 tbs).
Sauté aromatics
Add 1 tbs olive oil and 2 tbs unsalted butter to the skillet with the bacon fat over medium heat. Once butter foams, add 1 finely diced shallot and sauté 2–3 minutes until translucent. Add 3 minced garlic cloves and sauté 30–45 seconds until fragrant (don’t brown).
Build sauce
Add 1 diced tomato (or 1/2 cup canned diced tomato) and cook 2–3 minutes to soften. Pour in 1/2 cup low-sodium chicken broth, 1 tbs fresh lemon juice and 1 tsp Worcestershire sauce. Scrape up any browned bits and simmer 2–3 minutes to reduce slightly.
Cook shrimp
Increase heat to medium-high. Add seasoned shrimp in a single layer and cook 1–2 minutes per side, until pink and just cooked through. Do not overcook. Stir shrimp into the sauce to coat.
Finish and combine
Return reserved crispy bacon to the skillet and stir in 2 tbs chopped fresh parsley and sliced green onions. Taste and adjust seasoning with salt, pepper or a squeeze more lemon if needed.
Serve
Spoon a generous portion of hot cheesy grits into shallow bowls. Top with several shrimp and spoon sauce and bacon over the grits. Garnish with additional parsley and green onions. Serve immediately.
