Build & chill

Prepare glass

Chill a Collins or highball glass in the freezer for a few minutes, or fill it with ice water while you prepare the cocktail. If desired, rinse glass with a tiny splash of NOËL vodka and discard for extra aroma.

Combine base ingredients

Fill a cocktail shaker with ice (about 3/4 full). Add 2 oz NOËL vodka, 1 oz prickly pear syrup or puree, 0.75 oz fresh lime juice, 0.25 oz fresh lemon juice, and 0.5 oz ginger liqueur (or ginger syrup).

Shake

Secure the shaker and shake vigorously for 10–15 seconds, until the exterior of the shaker is very cold and the ingredients are well mixed and slightly aerated.

Finish & serve

Strain over ice

Discard the ice or water from the chilled glass and fill the glass with fresh ice (about 1 cup). Fine-strain the shaken cocktail into the prepared glass to remove any pulp or ice shards.

Top with soda

Gently top the cocktail with 2 oz club soda. Stir once gently with a bar spoon (1–2 turns) to integrate the soda without flattening the bubbles.

Garnish

Float a thin wheel of prickly pear or a small scoop of prickly pear puree on top and add a single thin slice of fresh ginger on the rim or on the surface for aroma. Optionally, express a lime peel over the drink and discard or drop in for extra citrus oil.

Serve

Serve immediately with a straw or stirrer so the drinker can adjust fizz and sweetness as desired.
