Prep crab
Clean and season
Rinse the crab claws under cold running water and pat dry thoroughly with paper towels. Using kitchen shears or a small paring knife, lightly crack the tips of the shell on the meaty side to help heat penetrate (do not fully split the claw). Place claws in a bowl and toss with 1.5 tsp kosher salt and 1/2 tsp freshly ground black pepper. Zest the lemon over the claws and reserve the lemon for juice after frying.
Make breading station
Dry mix
In a shallow dish, whisk together 1 cup all-purpose flour, 1/4 cup cornstarch, 1/2 tsp baking powder, 1 tsp paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder and 1/4 tsp cayenne until evenly combined.
Wet mix
In a second shallow bowl, beat together 2 large eggs and 1/2 cup whole milk until smooth.
Place 1 cup fine dried breadcrumbs (or panko finely ground) in a third shallow dish. If you prefer a thicker crust, combine half panko and half fine breadcrumbs.
Bread crab claws
Set up a 3-station breading line: dry flour mix, egg wash, breadcrumbs. Working in batches of 6–8 claws to avoid overcrowding, dredge each seasoned claw first in the dry flour mixture, shaking off excess. Dip into the egg wash, letting excess drip away, then press into breadcrumbs to coat evenly. For an extra-crispy double layer, repeat the egg wash and breadcrumbs once more. Place breaded claws on a wire rack set over a baking sheet; let rest for 10 minutes to help coating adhere.
Fry
Pour about 1 cup neutral frying oil into a heavy skillet (cast-iron or stainless) — enough for about 1/4 to 1/2 inch depth — and heat over medium-high until thermometer reads 350°F (175°C). If you don't have a thermometer, test by dropping a few breadcrumbs into the oil: they should sizzle and brown within 30–45 seconds.
Carefully add breaded claws to the hot oil in a single layer without crowding. Fry in batches for 2 to 3 minutes per side, turning once with tongs, until golden brown and crust registers 145–150°F inside (or until meat is opaque and hot). Adjust heat as needed to maintain 325–350°F and avoid burning the crust.
Use tongs to transfer cooked claws to a wire rack or paper towel–lined plate. If desired, immediately brush each claw lightly with 1 tbsp melted butter for gloss and flavor. Sprinkle with chopped parsley and a small pinch of salt while hot. Squeeze fresh lemon juice over claws to taste just before serving.
Make dipping sauce (optional)
Whisk together 1/2 cup mayonnaise, 1 tsp Dijon mustard, 1 tsp hot sauce and 1 tbsp lemon juice. Taste and adjust seasoning with salt, pepper or more hot sauce. Serve chilled alongside the hot fried claws.
Finish and serve
Arrange fried crab claws on a platter, garnish with additional lemon wedges and chopped parsley. Serve immediately so crust stays crisp. Leftover fried claws can be kept in a single layer in the refrigerator up to 24 hours and re-crisped in a 400°F oven for 6–8 minutes.
