Oysters & Shell Prep
Clean and stabilize shells
Rinse oysters under cold running water to remove grit. Using a stiff brush, scrub shells. Spread coarse kosher salt in an even layer on a sheet pan or baking tray to create a stable bed to hold oysters upright on the grill.
Shuck (if not pre-shucked)
If oysters are not shucked, carefully shuck them keeping as much liquor (juice) in the half shell as possible. Place each oyster on the salt bed to keep level. Refrigerate on the tray until ready to top and grill.
Mike's Special Butter Sauce
Melt butter and aromatics
In a small saucepan over medium-low heat, melt the unsalted butter. Add the minced garlic and finely minced shallot and gently sweat for 2–3 minutes until fragrant and softened but not browned.
Finish sauce
Remove pan from heat. Stir in the fresh parsley, lemon juice, Worcestershire sauce, hot sauce, smoked paprika, black pepper, and fine sea salt. Allow the mixture to cool slightly (1–2 minutes), then stir in the grated Parmesan and Romano until just combined. Taste and adjust salt, lemon, or hot sauce as desired.
Portion sauce
Spoon about 1 to 1 1/2 tablespoons of the warm butter sauce onto each oyster, spreading gently to coat the oyster and collect a little of the liquor. Reserve an extra 2–3 tablespoons of sauce for finishing if desired.
Grilling & Finishing
Chargrill oysters
Place the oysters on the salt-stabilized tray or directly on a grill-safe sheet (or use an oyster grill pan). Position the oysters on the hot grill. Close the lid and cook for 3–5 minutes until the butter sauce is bubbling, cheese is melted and slightly caramelized, and the edges of the oyster begin to curl. For a stronger charred flavor, open the lid and move oysters directly over the hottest zone for an additional 30–60 seconds, watching closely to avoid burning.
Finish and garnish
Remove oysters from the grill with tongs and transfer to a serving platter. Sprinkle each oyster with the reserved grated Parmesan (about 1 teaspoon per oyster) and a pinch of additional chopped parsley, chives, or microgreens. Serve immediately with lemon wedges for squeezing over oysters.
