Prepare and bake
Preheat oven to 375°F (190°C). Toss the bread cubes with 2 tablespoons olive oil, 1/2 teaspoon garlic powder, and 1/4 teaspoon salt until evenly coated. Spread in a single layer on a baking sheet and bake for 10–12 minutes, tossing once, until golden brown and crisp. Remove and let cool.
Grilled chicken (if cooking from raw)
Season and grill
Pat chicken breasts dry. Rub both sides with 2 tablespoons olive oil, 1 teaspoon kosher salt, 1/2 teaspoon black pepper, and 1/2 teaspoon garlic powder. Preheat grill or grill pan to medium-high heat. Grill chicken 5–7 minutes per side (depending on thickness) until internal temperature reaches 165°F (74°C). Remove and rest 5 minutes, then slice thinly against the grain.
Caesar dressing (housemade)
Combine ingredients
In a bowl or jar, combine 1 cup mayonnaise, 1/4 cup Greek yogurt, minced anchovy fillets (or 1 tsp anchovy paste), and 2 minced garlic cloves. Whisk to incorporate.
Season and emulsify
Add 3 tablespoons fresh lemon juice, 1 tablespoon Dijon mustard, 1 teaspoon Worcestershire sauce, 2 tablespoons olive oil, 1/4 cup freshly grated Parmesan, and 1/2 teaspoon salt. Whisk vigorously until smooth and slightly thickened. Taste and adjust seasoning—add more lemon for brightness or more salt/anchovy for savory depth.
Salad assembly
Prepare lettuce
Tear or chop washed Romaine into roughly 1–2-inch pieces and place in a large salad bowl. Pat leaves dry so dressing adheres better.
Dress the salad
Add about 1/2 to 3/4 cup of the housemade Caesar dressing to the lettuce (start with less; you can add more to taste). Toss gently but thoroughly so leaves are evenly coated.
Add chicken and mix-ins
Add the sliced grilled chicken, 1 cup grated Parmesan (reserve a small amount for garnish), and 1 cup croutons to the dressed lettuce. Toss gently to combine.
