Preheat and prep
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease individual oven-safe ramekins if making single-serving warm cookies.
Cream butter and sugars
In a large bowl using a hand mixer or stand mixer fitted with the paddle attachment, cream the softened butter, granulated sugar, and packed light brown sugar on medium speed until light and fluffy, about 2–3 minutes. Scrape down the bowl as needed.
Combine dry ingredients
In a separate bowl, whisk together the all-purpose flour, baking soda, and fine sea salt until evenly combined.
With the mixer on low speed, gradually add the dry ingredients to the butter mixture until just combined; avoid overmixing. Fold in the semi-sweet chocolate chips by hand with a spatula, distributing them evenly through the dough.
Portioning and Baking
Portion
For large cookies: scoop dough using a 3-tablespoon cookie scoop (about 2 ounces) onto the prepared baking sheet, leaving 2 inches between cookies. For single-serving warm cookies: press about 4–5 tablespoons of dough into each greased ramekin, smoothing the top slightly.
Optional chill
If time allows and you prefer thicker, chewier cookies, chill scooped dough for 30 minutes to 1 hour on the baking sheet covered with plastic wrap. If baking immediately, proceed to next step.
Bake
Bake in the preheated 350°F (175°C) oven. For large cookies, bake 10–12 minutes, until edges are set and light golden but centers still look slightly underbaked. For ramekins, bake 12–16 minutes depending on size—centers should be soft but not liquid.
Finish
Remove from oven and, if desired, immediately sprinkle a small pinch of coarse sea salt on each cookie or ramekin to enhance flavor. Allow cookies on the sheet to rest 3–5 minutes (or ramekins 2–3 minutes), then transfer large cookies to a wire rack to cool slightly. Warm single-serving cookies can be served directly in the ramekin.
Serve
Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, if using. Enjoy immediately so the center is warm and gooey.
