Preheat and dry ingredients

Preheat your waffle iron according to manufacturer instructions to medium-high heat. In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and fine salt until evenly combined.

Combine wet ingredients

In a separate bowl or large measuring cup, beat the 2 large eggs lightly. Add the whole milk, melted butter (warm but not hot), and vanilla extract. Whisk until homogenous.

Make the batter

Pour the wet ingredients into the bowl of dry ingredients. Using a spatula, fold just until combined. Small lumps are fine — do not overmix. Let the batter rest 5 minutes to allow the baking powder to activate and the batter to thicken slightly.

Prepare waffle iron

Lightly brush or spray the preheated waffle iron with vegetable oil or nonstick spray. If your iron is new or particularly sticky, oil more generously.

Cook waffles

Pour an amount of batter appropriate for your waffle iron (usually 1/2 to 3/4 cup for standard irons) onto the center of the lower plate. Close the lid and cook until the waffle is golden brown and crisp — typically 3 to 5 minutes depending on your iron. Avoid opening the iron early to check, as this can tear the waffle. Repeat with remaining batter, re-oiling the plates as needed between waffles.

Keep warm (optional)

If making multiple waffles, keep finished waffles warm and crisp by placing them in a single layer on a wire rack set over a baking sheet in a 200°F (95°C) oven. Do not stack waffles or they will steam and lose crispness.

Serve

Serve waffles immediately topped with maple syrup and optional fresh berries and whipped cream. Adjust toppings to taste.
