Chill and measure

Place carbonated water in the refrigerator until well chilled. Measure out ice, citrus juice, simple syrup and any flavored syrup you plan to use. If using fresh citrus, roll the fruit on the countertop to release juice and then cut and squeeze.

Assemble Soda

Fill a tall glass about halfway with ice (approximately 1 cup).

Add the fresh lemon or lime juice (1 tbs) and the simple syrup (2 tsp) directly over the ice. If using a flavored syrup for a specific soda profile (grenadine for a cherry/red soda, ginger syrup for ginger ale style, cola syrup for cola-like), add 1 tsp now.

Hold the glass at a slight angle and slowly pour 3 cups of cold carbonated water into the glass to preserve effervescence. Pour gently down a spoon or the side of the glass if possible.

Taste and adjust

Stir gently with a long spoon or straw just 2–3 rotations to incorporate syrups and juice without flattening the soda. Taste and adjust sweetness or acidity: add up to 1 more teaspoon simple syrup for more sweetness or another 1/2 tablespoon citrus for brighter acidity.

Garnish & Serve

Garnish with a citrus wheel or wedge on the rim and a sprig of fresh mint if desired. Serve immediately while fizzy.
