Crack and whisk

Crack all 4 eggs into a medium bowl. Add 1 tablespoon whole milk and 1 tablespoon melted or softened butter. Season with 1 teaspoon kosher salt and a pinch of freshly ground black pepper. Using a fork or whisk, beat repeatedly until yolks and whites are fully combined, the mixture is slightly frothy and uniform in color, about 30–45 seconds.

Taste and adjust seasoning if needed. If you prefer creamier scrambled eggs, increase milk to 2 tablespoons or add a splash of cream.

Preheat pan

Place a nonstick or well-seasoned skillet over medium-low heat. Add 1 teaspoon butter or neutral oil and swirl to coat the bottom. The pan should be hot enough that butter melts and foams gently but does not brown.

Low-and-slow cooking

Pour the beaten eggs into the warm skillet. Let the eggs sit, undisturbed, for 10–15 seconds until the edges begin to set.

Stir and fold

Using a silicone spatula, gently push the eggs from the edges toward the center, allowing uncooked liquid to run to the pan surface. Continue gently stirring and folding every 10–15 seconds, keeping the heat at medium-low. This creates soft curds. Total cooking time should be 2–4 minutes depending on desired doneness.

Add optional ingredients

When eggs are mostly set but still slightly glossy and jammy, sprinkle 1 ounce shredded cheddar cheese over them if using, and fold briefly to melt. Add 1 teaspoon chopped chives and/or 2 tablespoons diced tomato now or use as a garnish.

Finish and serve

Remove the pan from heat while eggs still look slightly moistened; carryover heat will finish cooking. Taste and adjust salt and pepper. Serve immediately on warmed plates to preserve creaminess.
