Bring to room temperature
Remove sausages from the refrigerator and let them sit at room temperature for 15–20 minutes. This helps them cook evenly.

Sear sausages
Add the sausages to the pan in a single layer, leaving space between them. Cook undisturbed for 3–4 minutes until the bottoms are golden-brown.
Brown all sides
Using tongs, roll the sausages so they brown evenly on all sides, about 6–8 minutes total. Reduce heat to medium-low if they begin to color too quickly.
Finish with butter & gentle steam
Add 1 tablespoon of unsalted butter to the pan and tilt to melt. Spoon the butter (and any juices) over the sausages for 30–60 seconds. Then add 2–3 tablespoons water, cover the skillet, and steam gently for 4–6 minutes until internal temperature reaches 160°F (71°C) for pork. If you don't have a thermometer, cut into the largest sausage to confirm juices run clear and center is no longer pink.
Rest
Transfer sausages to a plate and let rest for 5 minutes. Resting keeps them juicy and allows carryover cooking to finish.
Truffle Drizzle & Garnish
Prepare truffle drizzle
While sausages rest, place 1 tablespoon white truffle oil in a small bowl. Add the lemon zest (if using) and whisk briefly to combine. Taste and adjust: truffle oil is potent — use sparingly.
Plate & drizzle
Arrange sausages on a serving platter or individual plates. Using a spoon, lightly drizzle truffle oil mixture evenly over the sausages — aim for a fine, aromatic coating rather than saturating them. Sprinkle flaky sea salt and chopped parsley over the top.
Serve
Serve immediately with optional rolls and grainy mustard on the side. Provide additional lemon zest or small extra drizzle of truffle oil at the table for guests who want more aroma.
Optional Accompaniments
Warm rolls or bread briefly in a 350°F (175°C) oven for 5–7 minutes or toast lightly. Offer mustard alongside the plated sausages.
