Prepare aromatics
Finely chop 1/2 cup onion and measure 2 tsp minced garlic. If using raw onion in the mix you can sweat it briefly in a small skillet with a teaspoon of oil over medium heat for 2–3 minutes to soften and remove raw edge; cool before mixing. This step is optional but recommended for a milder flavor.
Mix binder
In a small bowl whisk together 1 large egg and 2 tablespoons milk. Add 1/2 cup breadcrumbs and let sit 2 minutes to hydrate.
Combine meat and mix-ins
Place 1 lb ground pork (or turkey or plant-based ground) in a large bowl. Add the cooled onion and garlic (if sweated), 2 tablespoons chopped parsley, and the breadcrumb-egg mixture. Using your hands or a spoon, gently but thoroughly mix until evenly combined — avoid overworking which can make the sausage dense.
Seasoning
Sprinkle 1 tsp kosher salt, 1/2 tsp black pepper, 1 tsp dried oregano, 1/2 tsp dried thyme, and 1/4 tsp red pepper flakes over the meat mixture. If making pork-style sausage add 1/2 tsp ground fennel seeds; for turkey or veggie versions add 1/2 tsp smoked paprika to boost savory flavor. Fold the spices into the meat until evenly distributed. Taste for seasoning by cooking a 1-inch patty in a small skillet: adjust salt and pepper as needed, then incorporate any changes into the full batch.
Forming & Cooking
Form patties or links: Divide the mixture into 8 equal portions and shape into 8 patties (about 2–2.5 oz each) or roll into logs for sausages. Wetting your hands slightly helps prevent sticking.
Pan-sear: Heat 1 tablespoon neutral oil (and 1 tablespoon butter, optional) in a large skillet over medium-high heat. When the fat shimmers, add the patties or links without crowding — work in batches if necessary. Cook 3–4 minutes per side for pork/turkey patties (internal temp 160°F/71°C for pork, 165°F/74°C for turkey; plant-based until browned and heated through). Reduce heat slightly if outsides brown too quickly.
Steam-finish (if thick): If pieces are thick and browning before cooking through, after browning both sides add 2 tablespoons water or broth to the skillet and immediately cover. Steam for 3–5 minutes until cooked through. Remove lid and cook 20–30 seconds more to re-crisp exterior.
Rest: Transfer cooked sausage to a plate and let rest 3–5 minutes to allow juices to redistribute.
Finishing & Serving
Finish: Optionally squeeze a little lemon or drizzle 1 tablespoon apple cider vinegar over the sausages to brighten flavor (especially good for turkey or veggie versions). Sprinkle additional chopped parsley if desired.
Serve: Serve hot as breakfast patties, in a bun, sliced into pasta, or alongside roasted vegetables. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
