Sausage & prep
Prepare sausage
Pat the kielbasa dry with paper towels. If the links are long, cut into 4–6 inch pieces so they fit in your pan and are easy to serve.
Season the sausages lightly with 1/2 tsp salt and 1/2 tsp black pepper, turning to coat evenly.
Browning
Brown the kielbasa
Heat a large heavy skillet or sauté pan over medium-high heat. Add 1 tablespoon vegetable oil. When shimmering, add sausage pieces in a single layer without crowding (work in batches if needed). Brown 3–4 minutes per side until nicely caramelized. Transfer browned sausages to a plate and set aside.
Aromatics & deglaze
Deglaze
Pour in 1 cup apple cider or beer and use a wooden spoon to scrape up brown bits from the pan. Let the liquid simmer 2 minutes to reduce slightly.
Braising & finishing
Build the braising liquid
Stir in 1 cup stock, 1 tablespoon brown sugar, 2 teaspoons Dijon mustard, 1 teaspoon apple cider vinegar, remaining 1/2 tsp salt, 1/2 tsp black pepper and 1 teaspoon smoked paprika (if using). Taste and adjust seasoning. Bring to a gentle simmer.
Braise the sausages
Return the browned kielbasa to the pan, nestling them into the liquid. Reduce heat to low, cover loosely, and simmer 10–12 minutes to finish cooking through and let flavors meld. If you prefer a slightly thicker glaze, remove the lid for the last 3–4 minutes and increase heat to medium to reduce the liquid until it coats the sausages.
