Pan sear and finish
Heat a large nonstick or stainless steel skillet over medium-high heat until hot. Add 1 tbs olive oil. Place salmon fillets skin-side down and press gently with a spatula for 10–15 seconds to prevent curling. Cook undisturbed 4–5 minutes, until the skin is crisp and the fish is cooked about two-thirds of the way up the sides. Flip carefully, add 1 tbs butter and the lemon zest to the pan, reduce heat to medium-low, and baste the fillets with melted butter for 1–2 minutes more until the center reaches desired doneness (about 125–130°F / 52–54°C for medium-rare to medium). Transfer to a warm plate and let rest 2–3 minutes.
Pistachio Emulsion
Sauté aromatics
In the same skillet over low heat, add 1 tbs neutral oil and the chopped shallot and halved garlic clove. Sauté gently 1–2 minutes until softened but not browned. Add a splash (about 1 tbs) of the stock and scrape any browned bits; remove from heat and let cool slightly.
Make the emulsion
In a food processor or high-speed blender combine the toasted pistachios, sautéed shallot/garlic mixture, fresh basil leaves, parsley sprigs (stems removed), lemon juice, warm water, white wine vinegar, honey, sea salt and black pepper. Pulse to start breaking down the pistachios, then slowly stream in the extra-virgin olive oil and neutral oil with the machine running to form a smooth, slightly thick emulsion. If the mixture is too thick, add up to 1–2 tbs additional warm water or stock to reach a pourable, velvety consistency. Taste and adjust seasoning (more salt, lemon, or honey as needed).
Finish
Strain the emulsion through a fine-mesh sieve if you want an ultra-smooth sauce; otherwise leave slightly textured. Keep warm at room temperature or gently rewarm very briefly over warm water — do not overheat or the emulsion may break.
To Finish & Serve
Plate base
Plate a small handful of microgreens or baby arugula in the center of each plate if using. Spoon 2–3 tbs of the pistachio emulsion onto each plate, creating a smear or pool.
Assemble
Place a rested salmon fillet on top of the emulsion, skin-side up for crisp texture. Spoon a little additional emulsion over the flesh (avoid soaking the skin). Sprinkle the reserved toasted chopped pistachios over the fish and around the plate for crunch.
