Pancake Batter
Combine dry ingredients
In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and fine salt until evenly combined and aerated.
Mix wet ingredients
In a separate bowl or large measuring cup, whisk the whole milk, large egg, melted unsalted butter, and vanilla extract (if using) until smooth and homogeneous.
Bring wet and dry together
Pour the wet mixture into the dry ingredients. Using a rubber spatula or wooden spoon, gently fold and stir until just combined. It's okay if there are a few small lumps — do not overmix or the pancakes will be tough. Let the batter rest for 5 minutes to hydrate the flour and thicken slightly.
Cooking & Serving
Preheat pan or griddle
Place a nonstick skillet or griddle over medium heat and let it warm for 3–5 minutes. The surface should be hot but not smoking. If you have an instant-read thermometer, aim for about 350°F (175°C) on the cooking surface.
Test and adjust
Lightly brush or rub a small amount of the unsalted butter or neutral oil over the cooking surface. Drop a tablespoon of batter to test. If it sizzles gently and forms bubbles on the surface after about 60 seconds, the pan is ready. Adjust heat as necessary (lower if browning too quickly).
Cook pancakes
Using a 1/4-cup measure (or two tablespoons for smaller cakes), pour batter onto the hot surface, leaving at least 1 inch between pancakes. Cook until bubbles form across the surface and the edges look set, about 2–3 minutes. Flip with a spatula and cook the second side until golden brown, about 1–2 minutes more. Repeat with remaining batter, adding a little more butter/oil to the surface between batches if needed.
Keep warm (optional)
If cooking in multiple batches, preheat an oven to 200°F (95°C) and keep finished pancakes on a baking sheet in the oven to stay warm and maintain texture while you finish the rest.
