Steep 1 tablespoon dried Roman chamomile flowers in 4 fl oz (120 ml) just-off-boil water for 6 minutes. Strain and cool completely (can refrigerate). Measure out 1 oz for the recipe; reserve remaining for another use. If using pre-made chamomile tonic or concentrated extract, adjust to equal strength and quantity.

Make chamomile infusion (advance)

In a mixing glass or cocktail shaker combine 3 oz non-alcoholic floral aperitif, 1 oz cooled Roman chamomile infusion, 0.5 oz fresh lemon juice, and 0.25 oz simple syrup.

Add a handful of ice to the shaker (or mixing glass) and stir gently for 15–20 seconds to chill and lightly dilute — or if you prefer a more aerated finish, shake vigorously for 8–10 seconds and then strain.

Fill a highball or large wine glass with the large ice cube(s) so the glass is about three-quarters full.

Strain the chilled aperitif base over the ice, leaving room at the top for soda (about 3 oz).

Gently top with 3 oz chilled Sicilian lemon soda poured slowly down the side of the glass to preserve effervescence and create a delicate layered look.

Give the drink one very gentle stir (1–2 turns) to integrate soda with the base without flattening the bubbles.

Express the basil leaf by holding it between your palms and giving it a gentle clap to release aromatics, then lay it on top of the drink near the rim.

Float the thin lemon wheel on the surface or perch it on the glass rim as a garnish.

Serve immediately. Suggestion: Provide a small cocktail spoon or straw and advise sipping slowly to enjoy the bittersweet orange-citrus botanical profile and the chamomile aromatics.
