Egg base
Beat eggs
Crack 4 large eggs into a medium bowl. Add 2 tablespoons whole milk, 1 teaspoon kosher salt, and 1 teaspoon freshly ground black pepper. Whisk vigorously until yolks and whites are fully combined and mixture is slightly frothy, about 30 seconds.
Cook eggs
Place a 10-inch nonstick skillet over medium-low heat. Add 1 tablespoon unsalted butter and let it melt, swirling to coat the pan. Pour the egg mixture into the skillet. Allow eggs to sit undisturbed for 10–15 seconds to start setting around the edges. Using a silicone spatula, gently push the set edges toward the center, tilting the pan to let uncooked egg run to the edges. Continue folding and pushing every 10–15 seconds until eggs are mostly set but still slightly glossy and creamy — about 2–3 minutes total. Remove skillet from heat just before they reach your desired doneness (they will continue to cook slightly).
Meat (bacon)
While the skillet and butter are heating, cook 2 bacon strips in a separate small nonstick skillet over medium heat until crisp (about 6–8 minutes), flipping occasionally. Transfer to a paper towel-lined plate to drain and cool for 1–2 minutes, then chop into 1/2-inch pieces. Reserve a small spoonful of bacon fat if desired to flavor the eggs (optional): after draining bacon, return 1/2 teaspoon bacon fat to the egg skillet in place of an equal portion of butter if you prefer a smokier flavor.
Cheese
When the eggs are nearly done (still slightly glossy), sprinkle 1 ounce shredded sharp cheddar evenly over the surface. Gently fold the eggs once or twice to incorporate the melting cheese, taking care not to over-stir so they remain fluffy. Allow the residual heat to melt the cheese fully, about 30 seconds.
Veggie
Assembly & garnish
Transfer the loaded eggs to a warm plate. Scatter the chopped bacon evenly on top, then sprinkle the remaining scallion slices. Add optional garnishes: drizzle 1 teaspoon hot sauce if using and sprinkle 1 tablespoon chopped parsley for color. Taste and adjust seasoning with a small pinch of salt or pepper if needed.
Serve immediately while hot alongside toast or a warm tortilla, if desired.
