For the potatoes
Prepare potatoes
Peel the potatoes and cut them into roughly 1/2-inch (1–1.5 cm) thick batons or strips. Rinse under cold water until the water runs clear to remove excess starch. Drain and pat completely dry with a clean kitchen towel or paper towels.
Heat oil
Pour about 180–200 ml of olive oil into a large heavy skillet or frying pan (preferably cast-iron) and heat over medium-high until it reaches 170–175°C (340–350°F). If you don’t have a thermometer, the oil should shimmer but not smoke.
Fry potatoes
Carefully add potatoes in a single layer (work in two batches if necessary). Fry, turning occasionally, until golden-brown and crisp on the outside and tender inside, about 8–12 minutes per batch depending on size. Use a slotted spoon to transfer fried potatoes to a paper towel-lined tray and immediately season with 1 to 1 1/2 tsp fine sea salt while hot.

Warm the ham or chorizo (if using)
If using Serrano ham: lay the slices briefly in a warm (not hot) dry skillet for 10–20 seconds per side to kiss them with warmth—this releases aroma without crisping them fully. If using chorizo: in a dry skillet over medium heat, lightly brown the slices for 2–3 minutes per side until they render some fat and are slightly crisp. Transfer to a plate and keep warm.
Make hollandaise-style eggs (traditional broken eggs)
There are two common approaches: (A) Crack eggs directly over the potatoes in the skillet, or (B) fry eggs sunny-side up in a separate nonstick pan. For even runny yolks, heat a separate nonstick skillet over medium-low with 1 tbsp olive oil; crack eggs into the pan and cook until whites are set but yolks remain runny, about 3–4 minutes. Season the eggs with a pinch of salt and freshly ground black pepper.
Break eggs (rotos = broken)
Using a fork or the edge of a spatula, gently break the yolks so they run over the potatoes and meat. Toss lightly and press so the yolk and oil coat the potatoes—this creates the signature creamy, saucy texture. Taste and add more salt if needed and grind a little more black pepper.
Finish and garnish
Drizzle the 1–2 tbs finishing olive oil over the assembled dish, sprinkle the chopped parsley and a pinch of smoked paprika if using. Serve immediately with warm crusty bread and lemon wedges on the side (a quick squeeze of lemon is optional with chorizo).
