Prep ingredients

Halve the avocados, remove pits, and scoop flesh into a medium bowl. Mince the jalapeño (remove seeds for milder heat), finely dice the red onion, core and seed the tomato then dice, chop the cilantro, and finely mince the garlic.

Mash avocados

Using a fork or potato masher, gently mash the avocado to your preferred texture — leave some small chunks for a rustic guacamole (about 8–10 light presses).

Combine and season

Add the lime juice, salt, pepper, cumin (if using), and minced garlic to the mashed avocado. Fold in the minced jalapeño, diced red onion, diced tomato, and chopped cilantro until evenly distributed. Taste and adjust salt, lime, or jalapeño to preference.

Rest and serve

Cover the guacamole with plastic wrap pressed directly onto the surface to minimize browning, or place in a bowl and refrigerate for up to 2 hours. Serve at room temperature with house-made tortilla chips.

Prepare tortillas

Stack the corn tortillas and cut each into 6 wedges (like slicing a pizza) to form triangular chips.

Fry method (crispiest)

Pour oil into a heavy-bottomed skillet or Dutch oven to a depth of about 1/2 inch (use approximately 1 cup). Heat oil over medium-high until it registers 350°F (175°C) or a cube of tortilla sizzles immediately. Fry chips in batches (do not overcrowd) for 45–60 seconds per side or until golden and crisp. Use a slotted spoon to transfer chips to a paper towel–lined tray. Immediately sprinkle with fine sea salt and optional chili powder while still hot.

Baked method (lighter)

Preheat oven to 400°F (200°C). Lightly brush both sides of tortilla wedges with a little oil or use a spray. Arrange in a single layer on a baking sheet. Bake 8–12 minutes, turning once halfway, until edges are crisp and lightly browned. Remove and immediately season with salt and optional chili powder.

Cool and serve

Let the chips cool slightly to crisp further. Transfer to a serving bowl and serve alongside the guacamole. Store any leftover chips in an airtight container for up to 2 days (best same day).
