Dry, light, pink and ripe with the soft fragrance of tangerine, citrus and strawberries.

If you don't have strawberry syrup, make a quick maceration: mash 3–4 ripe strawberries with 0.5 oz simple syrup (or 0.5 oz sugar + 0.5 oz warm water) until smooth, then strain through a fine mesh to yield about 0.5–1 oz. Chill briefly before using.

Prepare strawberry syrup (if not using ready syrup)

Chill a large white wine glass or coupe by filling with ice and water; set aside.

In a mixing glass filled halfway with ice combine 0.5 oz gin, 0.5 oz fresh tangerine juice, 0.5 oz strawberry syrup (or macerated puree), 0.25 oz fresh lemon juice, 2 dashes orange bitters, and 0.25 oz simple syrup (optional if you prefer slightly sweeter). Stir briefly (8–12 seconds) until well chilled and slightly diluted.

Discard ice and water from the chilled glass. Strain the chilled shaken/stirred mixture into the prepared glass.

Slowly pour 5 oz dry rosé wine down the side of the glass to preserve effervescence and layering; if you prefer a lighter finish, top with 1 oz club soda instead of pouring extra wine volume, or add the soda after the wine.

Express the oils of the tangerine twist over the drink by holding the twist skin-side down above the glass and giving it a quick squeeze, then rub the twist along the rim and drop it into the drink.

Thread or fan the strawberry on the rim or float it on top of the rosé for a fragrant, visual accent.

Serve immediately while chilled. Provide a small stirring stick so the guest can incorporate the layers if desired.
