Method
Prepare Chicken
Pound and season
Trim any excess fat from chicken breasts. If breasts are thick, slice horizontally to make 2 cutlets from each breast or place between plastic wrap and gently pound with a meat mallet to about 1/2 inch thickness. Season both sides with kosher salt and black pepper.
Set up breading stations
In a shallow bowl or plate, place the flour. In a second bowl whisk together the eggs and milk until combined. In a third shallow bowl combine breadcrumbs, grated Parmesan, dried Italian seasoning, and garlic powder; stir to combine.
Bread the cutlets
Dredge each chicken cutlet in flour, shaking off excess. Dip into the egg mixture, letting excess drip off. Press into the breadcrumb mixture, coating thoroughly and pressing so crumbs adhere. Place breaded cutlets on a wire rack or plate while heating oil.
Cook Chicken
Pan-fry until golden
In a large skillet, heat about 1/2 cup oil over medium-high heat until shimmering but not smoking (about 350°F if using a thermometer). Add breaded cutlets in a single layer (cook in batches if needed). Fry 3-4 minutes per side, until golden-brown and crisp. Adjust heat as necessary to avoid burning. Transfer cooked cutlets to a paper towel-lined plate or wire rack. Chicken will finish cooking in the oven.
Assemble and Bake
Preheat and prepare
Preheat oven to 400°F (200°C). Spread 1/2 cup of marinara sauce in the bottom of a 9x13 or similarly sized baking dish to prevent sticking.
Layer cutlets
Place fried chicken cutlets in the baking dish in a single layer. Spoon about 1/4 to 1/3 cup marinara over each cutlet, spreading gently to cover the top but not soaking the breading. Sprinkle about 1/2 cup shredded mozzarella over each pair of cutlets (divide mozzarella evenly across chicken).
Bake to melt cheese
Bake in the preheated oven for 12-15 minutes, until chicken is cooked through (internal temperature 165°F) and cheese is melted and bubbly. For a lightly browned top, switch the oven to broil for 1-2 minutes while watching carefully.
Finish
Remove from oven and let rest 3 minutes. Sprinkle with remaining grated Parmesan and tuck basil leaves on top if using.
Optional: Serve with Pasta
If serving with pasta, cook spaghetti or chosen pasta according to package directions in salted water (1 tbsp salt per 4-6 quarts water). Drain, toss with remaining marinara or a little olive oil, and portion onto plates. Place chicken Parm on top of pasta or alongside. Serve immediately.
