Brewed Coffee
Weigh and grind
Weigh 60 g (0.06 kg) of whole coffee beans for approximately 1.25 L of brewed coffee (this yields about 8 large cups). Grind beans to the appropriate consistency for your brewer: medium-coarse for drip or pour-over, coarse for French press, medium for commercial brewers.
Heat water
Bring 1.25 liters of filtered water to the appropriate temperature: 92–96°C (198–205°F) for most brewing methods. If you don't have a thermometer, bring to a boil and rest 30 seconds.
Brew
Brew the ground coffee using your chosen method. For a drip/pour-over, use a 1:20 coffee-to-water ratio (60 g coffee to 1.2 L water) and pour evenly to saturate grounds. For French press, steep 4 minutes before plunging. For commercial brewer, follow manufacturer instructions to produce about 1.2–1.25 L of hot coffee.
Transfer to thermal carafe
Immediately transfer brewed coffee into a preheated thermal carafe or airpot to keep it hot and fresh without overcooking. Preheat the carafe by rinsing it with hot water before use.

Place granulated sugar, whole milk, half-and-half (or cream), and optional flavored syrups in small containers beside the carafe so guests can customize. For a sweeter server, stir 4 tablespoons of sugar into the carafe while coffee is hot until dissolved, if you want lightly sweetened bottomless service (optional).
Spices
Provide small pinch bowls of ground cinnamon and nutmeg for sprinkling. If you prefer, add a light dusting of 1–2 tsp cinnamon or nutmeg to an entire carafe by mixing into a small amount of hot coffee until dispersed, but note this will alter the whole pot's flavor.
Service & Maintenance
Keep the carafe full: brew additional batches as needed to maintain a steady supply for bottomless service. For best taste, rotate coffee every 30–60 minutes by discarding and replacing with freshly brewed coffee rather than reheating the same pot for hours.
Temperature and freshness: keep brewed coffee between 82–88°C in an insulated airpot for short periods, but avoid holding at high temperatures longer than 1–2 hours to prevent burnt taste. Replace with fresh brew after 60 minutes for best quality.
Cleaning and hygiene: provide a clean ladle or pour spout, wipe spills promptly, and wash carafe and utensils between refills to maintain flavor and safety.
