Burger Patties

Form Patties

Divide the ground beef into two equal portions (about 8 oz each). Gently form each portion into a patty about 3/4 to 1 inch thick, making a slight indentation in the center with your thumb to help prevent puffing while cooking. Do not overwork the meat.

Season

Season both sides of each patty evenly with kosher salt and black pepper just before cooking.

Cook Patties

Heat a large skillet or cast-iron pan over medium-high heat and add the vegetable oil. When the pan is hot and shimmering, place the patties in the pan (do not overcrowd). Cook for 3-4 minutes on the first side without moving to develop a crust. Flip once and cook 2-3 minutes on the second side for medium doneness. During the last 60 seconds of cooking, place a slice of cheddar on each patty and cover the pan or place a lid to melt the cheese.

Toast Buns

While the patties are cooking or just after, spread softened butter evenly on the cut sides of the buns. Toast them in a skillet or on a griddle, cut-side down, over medium heat until golden brown and slightly crisp, about 1-2 minutes.

Prepare Lettuce, Tomato, Onion

Rinse and dry lettuce leaves. Slice the tomato into 1/4-inch thick slices and the red onion into thin rings. If using thicker tomato slices, cut to size so they fit the bun. Pat the tomato slices dry with a paper towel to prevent sogginess.

Optional Pickles

If using pickles, arrange 3–4 slices per burger and set aside.

Assembly & Condiments

Assemble Burger

Spread mayonnaise on the bottom bun if using. Place the lettuce leaf on the bottom bun, then the cheeseburger patty (cheese side up), followed by a tomato slice, onion rings, and pickles if desired.

Add Sauces and Finish

Spread ketchup and mustard on the top bun (or apply to the tomato/onion as preferred). Place the top bun over the stacked burger. Serve immediately with fries or chips.
