Prepare the Brisket
Preheat your smoker or oven to 225°F (107°C). Trim excess fat from the brisket and cut it into 1-inch cubes.
Season the Cubes
In a large bowl, mix together brown sugar, black pepper, garlic powder, onion powder, and salt. Toss the brisket cubes in the seasoning mixture until evenly coated.
Smoking the Brisket
Place the seasoned brisket cubes in the smoker or a baking dish if using the oven. Smoke for about 5-6 hours or until they reach an internal temperature of 190°F (88°C).
Prepare the Cola Barbecue Sauce
In a saucepan, combine the cola and barbecue sauce. Bring to a simmer over medium heat and cook for about 10 minutes until slightly thickened.
Toss with Sauce
Once the brisket is cooked, remove it from the smoker or oven and toss the cubes in the cola barbecue sauce until well coated.
Caramelize
Return the sauced brisket to the smoker or oven at a higher temperature (about 300°F/149°C) for an additional 30-45 minutes to caramelize the sauce.
Serve
Remove from heat and let rest for a few minutes. Serve warm with additional barbecue sauce on the side if desired.
