Method
Frying the Fries

Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into evenly-sized strips to ensure even cooking.

Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain and dry the soaked potatoes. Fry them in batches for 4-5 minutes until golden brown and crispy. Remove and drain on paper towels.

While hot, season the fries with sea salt and cracked black pepper.
Making the Horseradish Aioli

Combine Ingredients
In a bowl, mix mayonnaise, prepared horseradish, lemon juice, minced garlic, and a pinch of salt. Adjust seasoning to taste.
Making the Smoked Tomato Ketchup

Mix Ingredients
In a small bowl, combine tomato ketchup, smoked paprika, Worcestershire sauce, garlic powder, and onion powder. Stir until well mixed.
