Prepare the Fries

Cut and Fry Potatoes

Wash and peel the Russet potatoes. Cut them into thin strips for fries. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 5-7 minutes. Remove from oil and drain on paper towels. Sprinkle with salt.

Prepare the Gravy

In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until golden. Gradually add the broth while whisking to avoid lumps. Stir in soy sauce and black pepper. Bring to a simmer and cook until thickened, about 5-10 minutes.

Assemble the Poutine

Combine and Serve

On a plate, place a generous portion of fries. Top with cheese curds and pour the hot gravy over the top. Garnish with chopped green onions. Serve immediately.
