Burger Preparation

    Prepare the Patty

    In a large bowl, mix ground beef with chopped mushroom blend, salt, and black pepper until just combined. Form into two equal balls.

    Smash the Patty

    Heat a cast-iron skillet or griddle over medium-high heat. Place one ball in the skillet and smash it down with a spatula to create a thin patty. Repeat with the second ball. Cook for about 3-4 minutes on one side.

    Cook the Bacon

    In the same skillet, add bacon slices and cook until crispy. Remove and let drain on paper towels.

    Flip the Patty

    Flip each patty, and immediately place a slice of smoked cheddar on top. Cook for an additional 2-3 minutes until the cheese is melted.

Assembly

    Assemble the Burger

    Toast brioche buns lightly in the skillet. On the bottom half of each bun, layer lettuce, tomato slices, the smash patty with melted cheese, bacon, MTS sauce, and pickles. Top with the other half of the bun.
