Baked Salmon

Preheat the Oven

Preheat your oven to 375°F (190°C).

Prepare the Salmon

Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil, and season with salt and black pepper. Add lemon wedges around the fillets.

Bake

Bake in the preheated oven for 15-20 minutes or until the salmon flakes easily with a fork.

Seafood Butter Broth

Cook Shallots and Garlic

In a saucepan over medium heat, melt the butter. Add the minced garlic and chopped shallots, cooking until softened, about 2-3 minutes.

Add Liquid Ingredients

Pour in the seafood stock and white wine. Bring to a simmer.

Season

Add fresh dill, salt, and black pepper to taste. Allow to simmer for 5-10 minutes to blend the flavors.

Coconut Rice

Rinse the Rice

Rinse jasmine rice under cold water until the water runs clear.

Cook Rice

In a medium saucepan, combine the rinsed rice, coconut milk, water, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and liquid is absorbed.

Market Vegetables

Prepare the Vegetables

Wash and chop the seasonal vegetables into bite-sized pieces.

Sauté

In a large skillet, heat olive oil over medium heat. Add the vegetables and sauté until tender, about 5-7 minutes. Season with salt and black pepper to taste.
