Preparation

Cinnamon Syrup (prepare ahead)

1. Combine

In a small saucepan combine 0.75 cups water, 0.75 cups granulated sugar and 3 cinnamon sticks.

2. Heat

Bring mixture to a gentle simmer over medium heat, stirring until sugar fully dissolves. Do not boil vigorously — simmer 3–4 minutes to infuse cinnamon.

3. Cool & Strain

Remove from heat and let syrup cool to room temperature (about 20–30 minutes) to continue infusing. Once cool, remove cinnamon sticks and strain into a clean jar. Refrigerate up to 2 weeks. Use 0.25 oz per cocktail.

Cocktail Assembly

4. Add Ingredients

Place a mixing glass or rocks glass into which you'll build the cocktail. Add 0.5 oz pure maple syrup, 0.25 oz cinnamon syrup, 2 dashes Angostura bitters, 1 dash orange bitters (optional), and 2 oz bourbon.

5. Stir & Chill

Add ice to the mixing glass (enough to chill without over-diluting — about a handful) and stir briskly for 20–30 seconds until well chilled and slightly diluted (about 15–20% dilution by eye).

6. Transfer

Strain the chilled mixture over a large ice cube or several large ice cubes in an old-fashioned or rocks glass.

7. Garnish & Finish

Express the oils from an orange peel over the drink by holding the peel with the outer skin facing down and giving it a firm twist above the glass, then rub the peel rim on the glass and drop it in. Add a cinnamon stick for aroma if desired.

8. Serve immediately. Adjust sweetness in subsequent pours by increasing or decreasing the maple syrup by 0.125–0.25 oz according to taste.
