Crab Cakes

Prepare mixture
Gently pick through the lump blue crab meat to remove any shells, taking care to keep lumps intact. In a large bowl combine 0.75 cups panko, 0.5 cup mayonnaise, 1 beaten large egg, 1 tablespoon Dijon mustard, 1/2 teaspoon Worcestershire sauce, 1/4 cup finely diced celery, sliced green onions, 2 tablespoons chopped parsley, 1 teaspoon lemon zest, 1/2 teaspoon Old Bay, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Fold in the crab meat with a light hand until just combined — avoid breaking up the lumps. If mixture feels too wet, add up to 2 additional tablespoons panko; if too dry, add 1 tablespoon mayonnaise.

Form cakes
Portion the mixture into 6 equal cakes (about 3.5–4 oz each). Use lightly oiled hands to shape into compact discs about 3 inches across and 3/4-inch thick. Place formed cakes on a parchment-lined tray and chill in the refrigerator for at least 20 minutes to help them hold together.

Cook
Heat a large nonstick or cast-iron skillet over medium heat. Add 2 tablespoons unsalted butter and 1 tablespoon neutral oil. When butter is foaming and oil shimmers, add the chilled crab cakes (do not overcrowd; cook in batches if needed). Cook 3–4 minutes per side, until golden brown and crisp and internal temperature reaches 145°F/63°C. Gently flip with a wide spatula to keep cakes intact. Transfer cooked cakes to a warm oven (200°F/95°C) on a rack while you finish remaining cakes.
Mango Salsa

In a medium bowl combine 1 diced ripe mango, 1/4 cup diced red bell pepper, 2 tablespoons finely diced red onion, 1/2 minced jalapeño (adjust for heat), 2 tablespoons chopped cilantro, 2 tablespoons fresh lime juice, 1/4 teaspoon salt and 1/8 teaspoon black pepper. Gently toss and taste; adjust lime or salt as needed. Allow salsa to rest 10–15 minutes at room temperature to let flavors meld before serving.
Mixed Organic Greens

In a large bowl toss 4 cups mixed organic salad greens with 1 tablespoon extra-virgin olive oil, 1 tablespoon fresh lemon juice, 1/8 teaspoon salt and a pinch (1/16 tsp) of black pepper. Dress lightly just before plating so greens remain crisp.
Lemon Aioli

Whisk together 1/2 cup mayonnaise, 2 tablespoons fresh lemon juice, 1/2 teaspoon lemon zest, 1 teaspoon minced garlic, 1/2 teaspoon Dijon mustard, 1/4 teaspoon salt and 1/8 teaspoon black pepper until smooth. If the aioli is too thick, whisk in up to 1 teaspoon olive oil to reach desired consistency. Refrigerate until ready to plate.
Plating & Finish

Divide dressed mixed greens among 4 plates (1 cup greens per plate). Place one or two warm crab cakes atop the greens (for a main course, use two cakes; for an appetizer, use one). Spoon 2–3 tablespoons mango salsa over or beside each crab cake. Drizzle or dot about 1–2 tablespoons lemon aioli per plate around the cakes. Garnish with microgreens or extra chopped parsley and a lemon wedge. Serve immediately.

Leftovers and storage: Keep crab cakes refrigerated in an airtight container up to 2 days. Store salsa and aioli separately up to 48 hours. Reheat crab cakes gently in a 350°F (175°C) oven for 8–10 minutes to preserve texture.
