Fresh Mozzarella, Tomatoes & Assembly

Method

Balsamic Syrup

    Reduce

    Combine 1/2 cup balsamic vinegar and 1 tablespoon sugar (or honey) in a small saucepan over medium heat. Stir until the sugar dissolves and bring to a gentle simmer.

    Reduce heat to low and simmer, stirring occasionally, until the mixture thickens to a syrupy consistency and coats the back of a spoon, about 8–12 minutes. Watch carefully so it doesn't burn.

    Remove from heat and let cool slightly; it will thicken more as it cools. Transfer to a small bowl or squeeze bottle for plating.

Basil Pesto

    Toast Nuts (optional)

    If using raw pine nuts or walnuts, toast them in a small dry skillet over medium heat, shaking frequently, until fragrant and lightly browned, about 3–4 minutes. Let cool slightly.

    Blend Pesto

    In a food processor, combine 2 cups packed fresh basil leaves, 3 tablespoons toasted pine nuts (or walnuts), 1 garlic clove, and 1/4 cup grated Parmesan. Pulse to chop.

    With the processor running, drizzle in 1/2 cup extra-virgin olive oil until the mixture emulsifies and reaches a loose pesto consistency. Add 1 teaspoon fresh lemon juice, 1/2 teaspoon salt and 1/4 teaspoon black pepper; pulse briefly to combine. Taste and adjust seasoning.

    If a thinner consistency is desired for drizzling, stir in 1–2 teaspoons more olive oil. Transfer pesto to a bowl and set aside.

Fresh Mozzarella, Tomatoes & Assembly

    Prepare Cheese & Tomatoes

    Remove mozzarella from its packaging and gently pat dry with paper towels. Slice each mozzarella ball into 1/4- to 1/2-inch thick rounds. Slice heirloom tomatoes into 1/4-inch thick rounds; if tomatoes are large, cut into wedges instead. Keep slices roughly uniform thickness for even plating.

    Arrange on Plate

    On a large serving platter or individual plates, alternate tomato and mozzarella slices in an overlapping circular pattern (tomato, mozzarella, tomato) to create a classic caprese layout. Tuck whole basil leaves between some of the layers and scatter remaining leaves on top.

    Season & Dress

    Drizzle the assembly with 2 tablespoons extra-virgin olive oil. Sprinkle 1 teaspoon coarse sea salt evenly and 1/2 teaspoon freshly ground black pepper over the top.

    Add Pesto & Balsamic

    Dot or spoon 2–3 tablespoons basil pesto over the cheese and tomatoes; alternatively, place a small spoonful in the center of the plate. Finish by drizzling balsamic syrup artfully across the salad—use as much as desired, typically 1–2 teaspoons per portion.

    Serve immediately at room temperature so the flavors and textures are at their best.
