    Prepare produce

    Halve the avocados, remove pits, and scoop flesh into the blender or food processor. Peel the cucumber, cut into large chunks and add to the blender. Mince the garlic, measure the fresh herbs, and add them as well.

    Blend until smooth

    Add the cold vegetable or chicken broth, Greek yogurt, lime juice, olive oil, sea salt and black pepper to the blender with the avocado and cucumber. If you want a chillier, slightly thinner texture, add the ice cubes. Blend on high until completely smooth and silky, about 60–90 seconds, stopping once to scrape down the sides.

    Adjust seasoning and texture

    Taste and adjust salt, lime juice, or pepper to preference. If the soup is too thick, add additional cold broth 2 tablespoons at a time until desired consistency is reached (target: pourable but creamy). If blending without ice, chill the soup in the refrigerator for at least 1 hour before serving to develop flavors.

    Strain for an extra-silky finish (optional)

    If you prefer an ultra-smooth gazpacho, pass the blended mixture through a fine-mesh sieve into a bowl, pressing gently with a spatula to extract the liquid and leave behind any fibrous bits.

Cucumber-Avocado Garnish

    Combine the finely diced cucumber, small-dice avocado, and very finely minced red onion in a small bowl. Add the sliced chives, drizzle the teaspoon of olive oil, sprinkle 1/4 tsp finishing sea salt and a few grinds of black pepper. Toss gently to combine and keep chilled until plating.

    Tip: Toss the avocado in a few drops of lime juice if not serving immediately to slow browning.

Assembly and Serve

    Ladle the chilled gazpacho into bowls or chilled glasses (about 1 to 1 1/4 cups per serving).

    Spoon 1–2 tablespoons of the cucumber-avocado garnish into the center of each bowl. Drizzle a scant 1/4 teaspoon extra-virgin olive oil over each bowl and finish with a few pumpkin seeds or croutons and microgreens if using.

    Serve immediately. Leftover gazpacho will keep covered in the refrigerator for up to 48 hours; stir before serving and adjust seasoning if needed.
