Make the roux

In a heavy-bottomed Dutch oven or large pot set over medium-low heat, combine 1 cup vegetable oil and 1 cup all-purpose flour. Stir constantly with a wooden spoon or heatproof spatula. The roux will go through stages: paste, sandy, then it will darken to peanut butter color and then chocolate—aim for a deep brown (like milk chocolate) for classic gumbo flavor. This takes 25–35 minutes. Reduce heat slightly if it browns too quickly. Constant stirring prevents burning.

Once the roux reaches a deep brown color and has a nutty aroma, immediately add 2 tablespoons unsalted butter and stir to incorporate. The butter will loosen the roux slightly and add richness.

Slowly and carefully whisk or stir in 1 cup water to deglaze and thin the roux slightly, followed by 6 cups chicken stock, added in small increments while stirring to avoid lumps. Bring the mixture to a gentle simmer.

While making the roux (or in a separate skillet if you prefer), prep the vegetables: finely dice onion to yield about 1 cup, dice green bell pepper to 1/2 cup, and slice celery to 1 cup. If using okra or canned tomatoes, have them ready.

After the roux and stock are combined and simmering, add the diced onion, bell pepper, celery, and minced garlic to the pot. Stir to combine. Simmer gently for 15–20 minutes until the vegetables are softened and the gumbo begins to thicken.

If using okra, add 1 cup sliced okra at this stage to help thicken the gumbo and simmer for the same 15–20 minutes. If using drained diced tomatoes, stir them in now.

If using andouille sausage: in a separate skillet over medium heat, brown the sliced sausage for 3–4 minutes to render some fat and develop flavor. Transfer the browned sausage to the gumbo pot and simmer with the vegetables for 10 minutes so flavors meld.

Season the simmering gumbo with 2 tsp Creole or Cajun seasoning, 1 tsp smoked paprika, 1 tsp dried thyme, 1/2 tsp dried oregano, 1/4 tsp crushed red pepper flakes (if using), 1 tsp kosher salt, and 1/2 tsp freshly ground black pepper. Add the 2 bay leaves and stir. Taste the broth after 10 minutes and adjust salt/heat if necessary.

Reduce heat to low. Add the raw shrimp (1 lb) to the simmering gumbo and stir gently. Cook shrimp until just opaque and curled, about 3–5 minutes depending on size. Immediately add the lump crab meat (1/2 lb) in the last 2 minutes to warm through — avoid extended cooking to keep the crab tender and flaky.

Finish & Garnish

Remove the pot from heat. Discard bay leaves. If using file powder, sprinkle 1 tsp into the gumbo now and stir — file will thicken and add a distinctive flavor; add sparingly to avoid gummy texture. Stir in 2 tablespoons chopped fresh parsley and 3 tablespoons sliced green onions.

Serve the gumbo hot over cooked white rice (about 1 cup cooked rice per serving or 4 cups total for family-style). Garnish each bowl with additional green onion, parsley, and an optional lemon wedge for squeezing.

Leftovers: cool quickly and refrigerate within 2 hours. Gumbo often improves overnight. Reheat gently over low heat, adding a splash of water or stock if too thick.
