Chill glass & ingredients
Place a cocktail glass or rocks glass in the freezer for 5–10 minutes, or fill with ice and water to chill while you prepare the drink. Ensure the junmai sake is well chilled (about 45°F / 7°C).

Mix base
In a cocktail shaker, add the ume liqueur (umeshu) or plum syrup, fresh lemon juice, and simple syrup. Add a small handful of ice (about 1/2 cup).

Optional spritz
If you prefer a lighter, effervescent cocktail, top with 1 ounce of club soda or sparkling water. Stir gently once to integrate.

Garnish & finish
Garnish with a fresh plum slice or candied plum on the rim and an edible cherry blossom or mint sprig. Serve immediately so the floral aroma of the junmai and plum notes are prominent.

Adjustments & tasting notes
Taste and adjust sweetness with an additional 1/4 oz simple syrup if desired, or add a few drops more lemon for brightness. This cocktail highlights the clean, umami-driven profile of junmai sake balanced by the fruity sweetness of plum liqueur.
