Prepare Glass

Rub a lime wedge around the rim of a rocks or coupe glass. Dip the rim into coarse salt or tajín to coat evenly. Set glass in the freezer to chill while you mix the cocktail.

Combine and Shake
In a cocktail shaker add 2 oz blanco tequila, 1 oz housemade sweet and sour, 1 oz orange liqueur, 0.5 oz fresh lime juice, and 0.5 oz cooled hibiscus infusion. Fill the shaker with ice (about 1 cup) and shake vigorously for 12–15 seconds until well chilled and slightly diluted.

Using the back of a bar spoon, gently float 0.5 oz concentrated hibiscus syrup on top of the cocktail. To do this, hold the spoon just above the cocktail surface and pour the syrup slowly so it layers and creates a vivid float. If using a pinch of dry hibiscus for aroma, sprinkle it lightly on top of the float.
Garnish & Serve

Garnish with a lime wheel or wedge on the rim and a single dried hibiscus petal placed on the float for contrast. Serve immediately.
