Spiced Syrup

    Make syrup

    Combine brown sugar and water in a small saucepan over medium heat. Add whole cloves, ground cinnamon and grated ginger. Stir until sugar dissolves and the mixture just comes to a simmer, 2–3 minutes. Reduce heat and let simmer gently for 3 minutes to infuse. Remove from heat and let the syrup cool for 5 minutes, then strain out the cloves into a small bowl or measuring cup.

    Build the cocktail

    Fill a shaker or mixing glass with ice (about 4 ice cubes). Add 8 oz dry hard apple cider, 2 oz fresh apple cider, 0.5 oz fresh lemon juice and 1 oz bourbon and 0.5 oz dark rum if using. Add 0.5–1 tbsp of the warm (but not piping hot) spiced syrup to taste — start with 1 tbsp (half of the syrup made) for balanced sweetness and spice. Note: if you prefer no spirits, omit bourbon and rum and add an extra 1 oz non-alcoholic apple cider to maintain volume.

    Mix gently

    Stir gently for 10–15 seconds to combine and chill without flattening the cider too much. Do not shake vigorously to preserve cider carbonation. If you used a shaker, strain into a highball or Collins glass filled with fresh ice.

Garnish & Finish

    Trim an apple slice and slide it onto the rim or float it on top. Add a cinnamon stick as a stirrer and grate a pinch of fresh nutmeg over the surface. Serve immediately so the cider remains effervescent.
