    Chill glass

    Place a pint glass or beer mug in the freezer for 5–10 minutes or fill it with ice water while you prepare the other components to ensure the beer stays cold longer.

    Prepare citrus and syrup

    If not already measured, squeeze fresh lime to yield 1/2 oz (about half a lime). Measure 1/4 oz simple syrup. Simple syrup can be prepared ahead by dissolving equal parts sugar and hot water, cooling before use.

    Combine juice and syrup

    Add the fresh lime juice and simple syrup directly into the chilled glass. Swirl gently to mix — do not use vigorous stirring, which will cause excessive foaming when the beer is added.

    Add ice

    Add about 1 cup of fresh ice to the glass (enough to keep the drink cold but leaving room for the beer). If you used the glass to chill and it's empty, add ice now.

    Pour beer

    Tilt the glass to about 45 degrees and slowly pour the 12 oz Asahi (or other dry lager) down the side of the glass so it gently fills and minimizes foam. Stop and let settle if a large head forms, then continue pouring to top.

    Finish and garnish

    Give the drink one very gentle stir with a bar spoon (or tilt-and-roll) to incorporate the lime-syrup mixture into the beer without flattening it. Garnish with a lime wedge or wheel on the rim.

    Serve

    Serve immediately while cold and carbonated. Provide a straw only if desired; this cocktail is traditionally sipped directly from the glass.
